Rana pescatrice con Radicchio di Chioggia IGP glassato

  • Radicchio di Chioggia kg 4
  • Pancetta 8 fette
  • Brodo vegetale ½ litro
  • Porri n. 4
  • Fagioli cannellini kg 1
  • Sale e pepe q.b.
  • Zucchero e miele q.b.
  • Brandy e vino rosso q.b.
  • Molluschi misti q.b.

Procedure

Dai cespi di radicchio levare 8 foglie intere e metterle da parte. Tagliare in quarti i cespi di radicchio, adagiarli su una teglia e condirli con sale, pepe, zucchero, miele, brandy e vino rosso, quindi cuocere in forno a 150-160° per 20-25 minuti. Preparare la crema di facendo stufare con olio extravergine d’oliva i cannellini già cotti e porri per 20-25 minuti, aggiungendo ogni tanto brodo vegetale. Tagliare la coda di rospo già privata della testa e pulita in 4 tranci uguali, foderarli con le fette di pancetta e le foglie di radicchio, scottare gli involtini in padella con olio e.v.o. e finire la cottura in forno per 15 minuti. Assemblare i piatti con la crema di porri e cannellini a specchio, adagiarvi sopra la coda di rospo, guarnendo col radicchio glassato e molluschi a piacere, fatti precedentemente aprire in un tegame con leggero soffritto.
